| Mediterranean type country bread based on the wheat flour mixed with rye flour that is baked in stone oven. The dough is not strongly punched after the primery proofing and is softly luminated just like it is folded before the seconderly proofing. Then the loaf is 80% baked with very soft IR heat from stone oven and shock-frozen.
